Savory Shrimp Spaghetti (Tallarines con camarones)

1 tbsp olive oil
1 onion, chopped
1 clove of garlic, chopped
1 tsp Oregano
1/2 tsp Cumin
1 teaspoon of ground achiote or annatto powder
1/2 teaspoon chili powder, adjust to your preference
2 tbsp Cilantro, chopped
1 can of diced tomatoes
1 can tomato paste
1/2 cup chicken stock
12-14 oz. Spaghetti
2 lb bag Panamei uncooked shrimp, peeled.
16 ounce/1 lb of spaghetti or fettuccine pasta
Salt to taste

Heat the oil in a wok or frying pan, and cook the onion, garlic, and seasonings
over a medium heat for 5 mins.
Add tomatoes and cook for 5 more minutes
Add the broth and tomato paste, mix, and cook for 10 more minutes.
Turn down to a simmer, stir in the pasta and cook for 7 mins, stirring
occasionally to stop the pasta from sticking.
Add and stir in Shrimp.
Cook for about 3-5 mins until shrimp and pasta is cooked. Add more
seasonings, if needed.
Sprinkle with Chopped Cilantro, and Parmesan.
