Sautéed Baby Octopus

2 lb Panamei Baby Octopus
3 Garlic cloves, minced
1/4 cup dry basil
1/4 cup dry parsley
1/4 cup dry thyme
1 lemon, juiced
2 tbsp olive oil
Salt and pepper to taste

In a medium bowl, combine the baby octopus with the olive oil, lemon juice and spices. Marinade for about 30 minutes before cooking.

In a large pan, over medium heat, sauté the baby octopus for about 7 to 8 minutes, moving constantly to cook each piece evenly. Remove from the heat and serve immediately.

Optional: Garnish with lemon wedges and fresh parsley.
